I still save most of my muffins for afternoon snacks, but they make the best breakfasts. Especially when peaches are involved!

OMG Me too Kim!!! Peaches have been so hit and miss for me this year. In fact, when I was making this very batch, I threw away two before keeping the third peach and throwing it in to the batter. It wasn’t the greatest peach but after it was baked, you couldn’t even tell! So I’m thinking it’s a great recipe for using those kind of peaches. Thanks for stopping by Kim! xo!

The problem is, they’ve been hit or miss for me this summer. Sometimes when I buy them they are sweet, juicy and irresistible and other times- mushy and nasty.
