Boil 4 cups of water. Add salt and add uncooked farro. Turn heat down to medium-low and simmer for 15 minutes or until the farro is tender. Drain farro and set aside to cool.
In a large bowl, combine tomatoes, cucumbers, green onions, parsley, salt, pepper, garlic powder, lemon juice and olive oil. Add in cooked and cooled farro and toss. Serve and enjoy!!
